Vegetarian Quiche with Goats Cheese

Ingredients: Duration of Cooking: 40 minutes
1 Can of Butter Beans
1 Can of Chickpeas
1 Zucchini
2 Red Peppers
1 Onion
2 Small Shallots
1 tsp of Vegetable Oil
60 g of Garlic and Herb Goats Cheese or Plain
3 Large Eggs
3 Heads of Mushroom
Salt, Pepper, Garlic Granulates, Thyme, Paprika
1 Pack of Ready Made Shortcrust Pastry
1 tbs of Sesame Seeds
2 tbs of Breadcrumbs
30 ml of Hot Water
Directions:
Step 1: Finely chop up your veggies.
Step 2: Take a large pan add 1 tsp of oil then add the chopped veggies.
Step 3: Add seasoning to the veggies.
Step 4: Rinse through the chickpeas and the beans then add them to the veggies.
Step 5: Add 30 ml of hot water to it, cover it and cook it on a medium heat for 3 minutes.
Step 6: Prepare your tray by adding the shortcrust pastry to it. (Save the left over for the top.)
Step 7: Add 2 tbs of breadcrumbs on top of the pastry. (This will help to soak up the excess juices.)
Step 8: Add the veggie mix to the pastry.
Step 9: Crumble the goats cheese on top of the veggies.
Step 10: Whisk 3 eggs in a bowl and add 1 chopped scallions.
Step 11: Pour the mixture on top of the veggies.
Step 12: Use the leftover pastry to create a "Pie" look.
Step 13: Use the leftover egg wash left in the bowl to brush over the pastry on the top. (You can add some sesame seeds on the top (optional).
Step 14: Place it into the oven for 25 minutes.
