Delicious New York Style Cheesy Bagels



Ingredients: Duration of Cooking: 2 hours

  • 230 g of Plain Flour

  • 300 g of Self Raising Flour

  • 8 g of Dried Yeast

  • 1 tbs of Salt

  • 1 tsp of Sugar

  • 300 ml of Luke Warm Water

Boiling:

  • 1 litre of Boiling Water

  • 1 tbs of Baking Soda

Topping:

  • 100 g of Grated Cheddar Cheese

  • 1 Medium Egg

OR:

  • 2 tbs of Poppy Seeds

  • 2 tbs of Sesame Seeds

  • 1 tbs of Garlic Granulates

  • 1 tsp of Salt

  • 1 Medium Egg

Directions:


Step 1: Take the luke warm water, sugar and yeast. Combine all these ingredients together and let it raise for approx. 10 minutes.

Step 2: Take a large mixing bowl, sieve in the flour.

Step 3: When the yeast has risen combine it with the flour until a smooth dough is created.

Step 4: Let the dough raise at a warm place for approx 1 hour, or until the dough doubles its size.

Step 5: When the dough has fully risen place it onto a floured surface and divide the dough into 6 equal parts.

Step 6: Roll each divided dough parts into balls, then pinch a hole in the middle. Use your two middle fingers to stretch the middle part of the bagel. (Make sure not to stretch the middle too big as during the baking process it will expand.)

Step 7: Let the bagels raise for approx 30 minutes.

Step 8: Take a large saucepan, heat up 1 litre of water and add in the 1 tbs of baking soda.

Step 9: After raising the bagels for the second time, they're going to be very soft. Therefore use a large spatula to place the bagels (one at a time) into the hot water. Cook each bagel's side for approx 2 minutes.

Step 10: Pre-heat the oven at 180 degrees.

Step 11: Prepare a baking tray with baking sheet on it.

Step 12: Place the cooked bagels onto the prepared baking tray.

Step 13: Use an egg wash to create a glossy sticky texture.

Step 14: Add the preferred topping to the bagels then place them in the oven for approx 20 minutes or until they turns golden brown.
