Super Fluffy and Moist Carrot Cake with Orange Cream Cheese Frosting.

Ingredients: Duration of Cooking: 40 mins + 10 mins Preparation
Dry Part:
167.5 g of Plain Flour
167.5 g of Self Raising Flour
1 1/2 tsp of Baking Powder
1 1/2 tsp of Baking Soda
1 tsp of Salt
2 tsp of Cinnamon
1 1/2 tsp of Nutmeg
1 1/2 tsp of Cloves
Wet Part:
400 g of Shredded Carrots
Juice of One Lemon
200 g of Granulated Sugar
300 ml of Vegetable Oil
4 Large Eggs
150 g of Chopped Walnuts (Optional)
150 g of Sultanas (Optional)
Directions:
Step 1: Pre heat the oven at 180 degrees. Pic a tray shaped to your preference, line it with butter and flour to prevent the cake from sticking.
Step 2: Mix all the dry ingredients together in a large mixing bowl.
Step 3: Take another bowl to combine the wet ingredients using a hand mixer.
Step 3: Gradually add the dry ingredients to the wet ingredients and mix until combined.
Step 4: Pour the mixture into the pre buttered and floured tray then place it into the oven for 40 minutes, or until the cake passes the needle test. Which simply means when inserting a tooth pick into the cake it would come out clean.
