Sourdough Toast with Avocado Spread and Fried Eggs.

Ingredients: Duration of cooking: Approx 10 minutes


For the Avocado Spread:

  • 1 Avocado

  • 2 tbs of Mayonnaise

  • Salt & Pepper

  • Garlic Granulates

  • 1 tsp Fresh Lemon Juice

For the toast:

  • 2 Slices of Pana Sourdough Bread (from Merchant Quay Cork City)

For the Fried Eggs:

  • 1 tsp of Vegetable Oil

  • 2 Eggs

For Garnish:

  • Raddish

  • Lemon slices

  • Parsley

  • Sprinkle of Chili Flakes

Directions:


Step 1: Remove the skin and seed of the avocado then place it into a bowl.

Step 2: Add 2 tbs of mayonnaise to the avocado along with salt, pepper, garlic granulates and 1 tsp of fresh lemon juice then use a hand blender to combine all ingredients.

Step 3: Take a non-stick pan add 1 tsp of vegetable oil and crack the two eggs in. Cook the eggs on low heat, covered for about 5 minutes.

Step 4: While the eggs are cooking pop the sourdough bread into the grill or into the toaster.

Step 5: Assemble your meal.
