Crispy Pretzel Bites with Mustard Cheese Sauce

Ingredients: Duration of cooking: 1.5 hours
Base:
280 g of Plain Flour
8 g of Dried Yeast
170 ml of Luke Warm Water
1 tbs of Sugar
Sauce:
2 tbs of Dijon Mustard
50 g of Plain Flour
50 g of Butter
80 g of Grated Cheddar Cheese
250 ml of Luke Warm Milk
Salt, Pepper, Garlic Granulates, Chives
Cooking:
1 tbs of Baking Soda
1 litre of Water
Baking:
Coarse/Sea Salt
1 Medium Egg
Directions:
Step 1: Take the 170 ml of luke warm water water, pour the instant yeast in along with the sugar and mix well. Let is raise for about 10 minutes.
Step 2: Take a large mixing bowl and sieve your flour in. When the yeast has raised up combine it with the flour until a smooth dough is created.
Step 3: When the dough is fully combined place it in an oiled out bowl and let it raise at a warm place for an hour or until the dough doubles its size.
Step 4: When the dough reached its size, place it to a floured surface and divide the dough the equal parts by using a scale.
Step 5: Preheat the oven at 180 degrees. Prepare a baking tray with baking paper lining.
Step 6: Grab a pan and heat up 1 litre of water and add in the 1 tbs of baking soda.
Step 7: Roll each piece of dough into little balls then drop them into the boiling water until they come up to the surface.
Step 8: Place the cooked dough balls onto the baking sheet, cover them with egg wash and sprinkles of coarse salt/sea salt. Bake it in the oven until the golden brown colour is achieved.
Step 9: Take a small pan add in 50 g of butter, let it melt then add in the 50 g of flour then combine along with the milk. (It may seem lumpy at first but the milk will help to create a smooth sauce.)
Step 10: When the sauce reached that smooth texture you can add in the dijon mustard, cheese, and seasonings.
Step 11: Take the fully baked pretzel bites out of the oven, place it in a bowl alongside with the mustard cheese sauce.
