Grilled Chicken with Red Cabbage and Fluffy Mashed Potatoes.

Ingredients: Duration of cooking: Approx 1 hour 20 minutes


For the Chicken:

  • 1 Whole Chicken

  • Spice Mix for the Rub- Garlic Granulates, Salt, Pepper, Paprika, Cajun Seasoning, Chili Flakes, Oregano, Thyme

  • 2 tbs Oil

  • 100 ml Hot Water

  • 1 Half of a Lemon

For the Chicken Skin Filling:

  • 50 g of Butter

  • Mix of Fresh Herbs - Parsley, Basil, Thyme, Garlic Granulates, Salt & Pepper

For the Red Cabbage:

  • 1 Medium Onion

  • 2 tbs of Vegetable Oil

  • 2 tbs Granulated Sugar

  • 400 g of Thinly Cut Red Cabbage

  • 1 tbs of Ground Cumin

  • 3 Bay Leaves

  • 1 tsp of Salt (Can always add more)

  • 50 ml of Hot Water

  • 1 tsp of Vinegar

  • 35 ml of Cream (Optional)

For the Mashed Potatoes:

  • 4 Large White Potatoes

  • Water to Cover them

  • 1 Large tbs of Butter

  • 60 ml of Hot Milk

  • Salt

  • 1 tbs of Sour Cream (Optional)

Directions:


Chicken:


Step 1: Preheat the oven at 190 degrees.

Step 2: Place the chicken on a chopping board upside down and cut the spine out.

Step 3: Turn the chicken around and apply pressure to the middle of the chest aiming to break the chest bone to flatten the chicken completely to allow even cooking.

Step 4: Make the chicken skin filling by mixing 50 g of butter and the mixture of herbs.

Step 5: Place the butter and herb paste under the two breast's skin- this will crispen the skin.

Step 6: Make the rub for the chicken by combining the above mentioned herbs and cover the chicken with it well.

Step 7: Prepare the tray you will be using for the chicken by adding 2 tbs of oil, 100 ml of hot water and half a lemon.

Step 8: Place the chicken on top of the lemon into the tray, cover it then place it into the oven for 40 minutes covered and 30 mins uncovered.

Step 9: After taking the cover off the chicken check regularly inside and outside. (Your chicken may not need 30 minutes to get that nice golden brown colour).


Red Cabbage:


Step 1: Dice up the onion.

Step 2: Thinly slice up the red cabbage.

Step 3: Add 2 tbs of vegetable oil to a large saucepan.

Step 4: Add the onions and cook it for about 2 minutes on medium heat.

Step 5: Add the 2 tbs of granulated sugar and caramelise them together.

Step 6: Add the red cabbage and combine the ingredients well.

Step 7: Add salt, ground cumin, bay leaves and vinegar along with 50 ml of hot water to avoid burning.

Step 8: Cover it and cook it on a low heat for 20 minutes. Stir often and gentle to avoid breaking the cabbage.

Step 9: Check if the cabbage fully cooked, if it is turn the heat down and Enjoy!


Secret Step: (Optional) If you want to make it a really hearty dish you can add 35 ml of cream bring it to boil and serve.


Mashed Potatoes:


Step 1: Peel, cube and wash potatoes then place it into a saucepan.

Step 2: Add a tsp of salt and cold water to the potatoes and cook it on high heat for 10 minutes (until soft - again potatoes are different so check often by sticking a fork into a cube).

Step 3: When the potatoes are ready drain them and add 1 large tbs of butter and use a masher.

Step 4: Add 60 ml of hot milk and combine.

Step 5: Taste check. add more salt if needed. Enjoy!


Secret Step: (Optional) You can add 1 tbs of sour cream to make it more creamy and give a richer taste to your mash.
